                                Africa Chicken barbecue In Africa, we used to say chicken is life.its delicious and tasty many people like chicken. many communities have almost the same preparation, the food has almost the same taste. some people do it on a wood fire or charcoal. let's share how to start to do chicken barbecue. we first bring the chicken to boil by adding all the ingredients, let it cook for 30 to 45 minutes. makes sure the chicken is well cooked and tender before roasting it.                                                                       barbecue chicken The ingredients  that you need for one full chicken is: 3 Soup spoon garlic past, Black pepper, 3 onions, Salt, Maggi, vegetable oil. when the chicken is well cooked or tender you can start to do roasting.                           fried sweet potatoes (patates)

The sweet potatoes preparation is:
3-4 medium sweet potatoes
oil
salt

Cut sweet potatoes in long 1/2 inch wedges .prepare according to plantain directions. store in paper bags as well.it's  a snack food found in markets and on streets.all over West Africa it is often served with a very oily Onion, Tomato, and dried fish sauce.

the preparation we need a plantain called bananas vegetable Oil Salt this snack tasty is sold all over West Africa. the plantains are sliced into 1/2 inch thick round, heat Oil until very hot in a frying pan or electric fryer put a little salt on plantains and fry until done.

another version of the recipes called loco in southern, is to slice large chunks of plantains into a good amount of a palm oil in a pot. add onions and 2 Maggi cubes to the browned plantains and sauce. 

                                      Ginger Drink


the ginger drink tastes just like the stuff you get in a little bag. it's delicious it's very good and refreshing.
the make is boiling water.
Ginger root, fresh, peeled and grated.
Sugar.
Cloves, Whole.
Cinnamons sticks.
Lime juice, fresh or Lemon juice.
Orange orange.
Cool water.

Pour the boiling water over the grated ginger root, sugar, cloves, cinnamon, in a large nonreactive pot or bowl.cover and set aside in a warm place, for at least an hours. strain the liquid through a fine sieve or cloth. Add the juices and water. set aside in a warm place for an hour again. Gently strain the liquid again, taking care not to disturb the sediment at the bottom. store in the refrigerator. Serve warm, chilled, or on ice.and try the taste. it's so refreshing.

                          Hibiscus Drink (jus de bisap)

Hibiscus juice

dried hibiscus flowers. strawberry or pineapple extract.
Sugar.
Vanilla extract.

Wash hibiscus flowers in lukewarm water.boil flowers in 2 quarts of water. Do not boil for more than 1 minute or juice will become bitter. Remove flowers and carefully. Pour juice into a container. Be sure to avoid pouring any sediment from the bottom of the pot into a container. let sit until cool. Mix in sugar and extract. refrigerate.

                         Tamarind Drink (jus de tamarin)

Vanilla extract.

As with juice the bisap, boil water. Rinse tamarind and remove pods if possible.it is not necessary to remove the seeds. Add to boiling water. Boil for 1 or 2 minutes. Let stand until cool. Use a strainer to remove larger sediment and seeds. Keep in your mind that is juice is thick and that you should not remove the pulp. Remove smaller sediment while pouring into a container add sugar and vanilla for more taste. Refrigerate.

le kouti es l'un  des aliments de rue les plus reponduis en basse Guinee. Galette croustilante  a souhait et a sauce pimenter qu'on retrouve impeux partout a tout les careffours,recreations scolaire,les gares.
un amuse geule a gout exceptionel.
ingredients de 10 personnes par exemple:
1kg de manioc frais,
du sel
1 litre d'huile
2 fillets de poissons fumes
25 gr de sanfoui( poudre de crevettes sechees)
2 onignons
3 a 4 gros piments
soumbara (ou 1 a 2 cube magie)
preparations:
couper le manioc en gros cylindres.piler le manioc,retirer la prermiere pellicule du battons de manioc a l'aide d'un couteau tranchant et laver.
Raper les manioc a l'aide d,une rappe ou d'un robot electrique.
Mettre la pulpe de manioc dans un tissue propre,presser la chair de tout son jus d'amidon.
saler et confectionner de petites boulettes ovales.ne pas trop les serer sinons ils risques de devenire trop duire a la cuisson
Faire chauffer l'huile et frire les boulettes dans l'huile bouillantes.
Elles sont prete losqu,elles sont dore.
pour faire la sauce de piment:
Eplucher et decouper en quatres les oignons.emietter le bonga,en preammant soins d'enlever la peau et toutes les aretes.couper les piments en 2 et les emonder.Mixer tout les ingredients de la sauce ensemble et faire revenire dans de l'huile chaude quelque minutes.

                                    Soupe de Boulettes



En Guinee ces boulettes sont venduis impeux partout dans les ecoles dans les rue,au marcher et autres, les boulettes sont tres pimenter et aussi cuites dans une soupe tres pimente.fait generalement au poissons. bien pimenter et delicieux

Ingredients:
1 poisson
1 oignon
4 gousse d'ailes
1/2 tasse de tranche d'oignon vert 
1 cuillere a soupe gingembre
1 cuillere a soupe de tomate concentree
beaucoup de piments frais slons le gout
1 cuillere a cafe de poivre noir frais 
sel au gout
1 cuiullere a soupe de pattes d'arachide
1 cuillere a soupe de farine de mais
jus de citrons ou meme des tamarins
cube maggi.
