In Guinea we can find different ethnics dishes to enjoy most of them are eating with rice
lets start we the most popular dish: KONKOE TURE GBELI SAUCE  is a dish originally from the coast in guinea made with smoked catfish and vegetables its one of the most popular and loved the dish.
to make konkoe ture  gbeli the ingredients that we need are :
Konkoe called (smoked catfish)  Palm Oil  Aubergine  Onions  Garlic Gloves  Okras  Potatoes  Carrot  Tomato Past Fresh Tomatoes Spring Onions Salt  Pepper and Maggi

   KANSIYE SAUCE-PEANUT BUTTER-SAUCE

                                                                 Peanut Butter-Sauce

 Sauce kansiye can also call mafai tigua. this sauce is made by peanut butter. usually, most of the people eat with rice the sauce can be made with chicken fish or meat. the ingredients we need are: chicken fish or meet  Oil  Large onions  chopped  Salt   black Pepper  Chilly Garlic Cloves  minced   Parsley chopped  Ground cloves  Tomato Sauce  water   Cooked Rice to serve
                       

TO WITH OKRA SAUCE


This is a typical dish from the upper in Guinea in the Mandigo city where is the plant cassavas
To is mashed flour from dried cassavas its also called  fufu from other western  Africans countries the ingredients are same and the recipes will vary according to the regions or the country

LEAF SAUCE SWEET POTATO MAFAI HAKKO POUTAI


Cut up the leaves, or buy them already cut for the simple way heat the palm oil in the pot until just he starts to smoke saute the onion until translucent. start adding hand full leaves into the pot. letting each handful cook down a minute or two. then put water to cover the leaves. add chilli pepper and bring the sauce to a rolling boil. Add fish or meat and stir in. boil until no water is left on the surface, just a layer of oil, there will be a lot of little bubbles, but not the large bubbles as with water as in rolling boil. at the end serve with RICE.
  The ingredients are Palm oil or Plain vegetable oil. bunches sweet potato leaves, cut finely Onion, chopped, Salt, Chilli, Pepper, Fish or Meat.
  

      YASSA SAUCE ONIONS SAUCE


Yassa sauce Onions sauce is west African sauce the Preparation is Chicken, Lemons squeezed, Cloves garlic, minced, Onion, sliced in rounds, Red peppers, Oil, Bay leaf, Salt and pepper. 
Then Wash and dry chicken and cut into pieces. Marinate chicken in a mixture of lemons juice, Onion, Garlic put some Oil for several hours, for several hours, turning occasionally as that all parts all covered. Remove Chicken and grill, boil, or braise until all pieces are lightly browned, on all sides. Drain Onion and garlic, but retain the marinade. use a heavy casserole saute Onions and garlic in the remaining Oil until soft. Add chicken, Bay leaf, peppers  Salt and Pepper. simmer until chicken is tender (1 –1/2 hours) or bake in the medium heat. Add marinade now and then so a mixture remains moist. Serve over Rice.


FOOTI SAUCE



The ingredients are Tomato paste, Smashed tomatoes Small Eggplants, chopped, Maggi cubes, pounded meat, oil, Okras if you need it, 

Combine first 5 ingredients, then cook meat in the oil.  when meat is well cooked, Add the tomato mixture, and cooks for 30 minutes. Cook the Okras in the sauce, and when finished cooking, pound the Okras (alone) and then mix pounded okras into the Rice. serve sauce over Rice( an additional topping sprinkle on top of the Sauce can be made by pounding Maggi cube with odji).
